If you want to make Aloo bukharay ki chutney then you need to get these ingredients first. You will require 1.2 kg of dry plum, 1 cup of white vinegar, 1 teaspoon of black pepper, it should be in crushed form. You will need 2 to 3 small cardamom and 1/2 cup of Roasted melon seed. 1 cup of sugar and also salt which you will add according to your taste. First you have to soak 1/2 kg  of plum for about the time frame of 15 to 20 minutes.

Then you have to cook this plum along with 2 cup of water. When you will see that water is all dried up then you can add 1 cup  of sugar and salt to taste. Add too 1 teaspoon of black pepper and also 1 cup of vinegar. Cook it again. When you will see that sugar has all dried up then you can add 1/2 cup of roasted melon seeds along with about 2 to 3 crushed in form cardamom. To make Imli Chutney, it is known with the name of Tamarind as well. To make this delicious sauce, you need to have 1/2 cup of tamarind/imli, 3/4 cup of gur (jaggery) or sugar, it should be chopped in a finer way. 1 tea spoon of red chilli powder and 1 tea spoon of cumin powder and 1 teaspoon of Amchur powder. One and a half cup of water, 1/4 teaspoon of black salt and normal salt. You can add dates and raisins too but it is optional for you.

Take a pan and then you have to add the tamarind pulp and also the sugar or it can be jaggery, rest of the ingredients in that pan! Start boiling this paste until you see that it becomes thick like in a form of ketchup. Get the right consistency for your sauce. Just let the sauce to get cool down.You can no serve it.
